After having eaten tons of the chocolate variety and following on from our Easter blog about various types of eggs, here’s how I turn a basic ingredient into a luxurious, eggstra ordinary instant meal.
Lynn’s fluffy omelette, tested by Anis Asghar and Rose Lindstedt
This may seem a simple dish but it’s amazing how many people can’t cook a good omelette! My family and friends all love my version and it’s so very simple, speedy, cheap and healthy too. It shouldn’t take more than 10 minutes and you can even make one if eggs are all you have in the cupboard. By Lynn Asghar
2-3 eggs per person depending on hunger and if it’s for dinner, breakfast or lunch, plus whatever else you fancy. Get creative by adding anything you find lurking in the fridge or cupboard.
Preheat the grill to high. Coat the bottom of a shallow frying pan with a light spray of olive oil, place over a moderate heat, add chosen chopped vegetables and any raw ingredients. Cook gently stirring to prevent burning. Do ensure that any meat or fish is properly cooked before serving.
Here’s what makes it fluffy. Separate the yolks and whites into two separate bowls, whisking the whites for a minute with a hand whisk in one and breaking the yolks with a fork in another. Gently stir the whites and yolks together, retaining the air. When the vegetables are soft, pour the egg mixture into the pan, turning down the heat so the bottom doesn’t burn. Immediately start tilting the pan away from you and using a spatula, draw the mixture away from the edge towards the centre. The liquid egg will run into the gaps to refill the edges. Continue all the way round the pan forming a nice thick, round omelette.
Add the other ingredients, sprinkling them randomly over the surface and continue to cook on the stove for approximately 2-3 minutes to set the bottom of the omelette, leaving the top fairly runny.
Place the pan under the grill until your omelette is soft set and bubbling. Carefully fold it onto a plate and serve with a salad or fresh bread and butter. It may go flatter if you over cook it.

Anis’ comments. If you’re not an experienced cook, read the recipe first so you’re clear of the steps before you start cooking. It cooks really quickly so you need everything ready beforehand.
Rose’ comments. Next time I’ll fry and grill it less. It was so quick and easy though. Delicious even if I do say so myself!
